Non-vintage brut wines dominate the production of France's Champagne region, and though they can be very good, they tend to eclipse other types of Champagne in the awareness of many consumers. This class illuminates the surprisingly wide array of Champagne styles by surveying types such as Non-Dosage, Crémant, Blanc de Blancs, Blanc de Noirs, Rosé, Demi-Sec, and Grower Champagnes. A side-by-side comparison of these styles will also facilitate a discussion of how they can be employed to achieve fantastic matches with different foods.
